Do you chop the ham and mix it with the scrambles eggs or sit the scrambled egg on top of the slice ?

I make my honey mustard with Dijon mustard which is really strong so i use about 40% mustard, 40% creme to make it softer and the rest honey salt and a hint of cider vinegar...

I will try with green onions one and origano another... i have the feeling the green onion will match better the eggs... (Ciboulette / cebollin)
