I am beginning to realise that I love being in the kitchen. It has moved beyond being a chore and necessity to being something I look forward to. This new realisation is much to the delight of my family.
So what cooking today? It is banana bread. Not just any banana bread but my version. There are many easy recipes but this one is a totally plant- based version.
There are
.no eggs
.no cow’s milk
.no added sugar and in this recipe
.no nuts.
No I am not nuts😀 I chose to use pumpkin and sunflower seeds. Also the bananas and raisins provide sufficient sweetness.
Despite all the omissions - there is still something left in this banana bread and it is delicious too.
These are plant based substitutes -
.eggs - flax meal;
.cow’s milk - water or any plant- based milk.
The ingredients
- 350g (4) bananas (speckled skin)
- 200g almond flour
- 75g brown rice flour
- 30g flax meal
- 70g sunflower seeds
- 70g pumpkin seeds
- 60g raisins
- 1 tsp baking powder
- ¼ tsp salt
- ¼ tsp cardamon powder
- 1 ½ tsp cinnamon
- 2 ½ tbsp vanilla
- 2-4 tsp of water or plant-based milk (if needed)
The Method:
1.Pre-heat oven - 180 Celsius or 350F
2.Peel the bananas, place them along with the raisins in a food processor or blender - blend for a few minutes until smooth.
3.Combine together all dry ingredients in a mixing bowl. (Almond flour, rice flour, flax meal, baking powder, salt, cardamon and cinnamon.)
4.Pour the blended bananas from the blender into a mixing bowl and also add the vanilla.
Add the dry ingredients and the seeds.
5.Stir well until all ingredients are combined together. If the mixture seems too dry add up to 4 tbsps of water or milk.
6.Place mixture in a silicon loaf container or a normal loaf tin and spread evenly. (Line loaf tin with parchnent paper.)
7.Sprinkle sunflower and pumpkin seed on top.
8.Bake for 40-45 mins. Check with a prick stick or knife until clean.
9.Cool the banana bread and Enjoy.

I have also made this recipe with oat flour but this version is preferred, I can assure you this banana bread does not last too long. It is simply delicious!!
My kids love the ends of this banana bread - so sometimes I bake the ingredients in a cupcake maker. Voila!!
