I agree that water is a big concern. Solar panels and electricity can be done easily, but water can present more challenges, especially if located in the mountains. I do like mountains too; the air is fresh and the views are splendid!
Your childhood sounds like it was amazing and it seem to have given you a lifelong appreciation for living an off-grid and an alternative lifestyle.
