Sisig is a famous pork dish in the Philippines. It is made of minced pork face, chicken liver, onions, and chilli peppers. This is a Kapampangan dish, or a dish originating from Pampanga, in the central Luzon area in the Northern part of the Philippine archipelago.
The pork face used in sisig is usually a leftover from litson or grilled pork. Litson is a whole pig grilled over charcoal and another famous Filipino pork staple in celebrations. Some really mince the pork into tiny pieces but some restaurants have it chopped a little bit bigger just like in the pictures.
Sisig is usually served while it sizzles and you top it with a raw egg while it's hot and you mix it then squeeze kalamansi (Philippine lemons). Some will top it with ground pork rinds, fried garlic, and spring onions. Any other sides and herbs will do, especially the ones that work well with pork dishes.
The taste is kinda sour, spicy and the tasty essence of grilled pork that's cooked again to make sisig. It also has that chewy or gummy texture of the pork skin. The chicken liver binds them all and gives it that sweet taste and livery texture. The onion and pepper are notable in the taste and aroma as well.
