Coffee of the day

We are currently in summer with a lot of humid rainy days so the best for me is an ice coffee. A Simple African Arabica , Medium to Dark Roast , ice coffee , with no sweeteners or syrups. African medium roast are really the best and i would advise anyone to pick up a bag and try it out, The flavors are so chocolatey with Just a smooth taste. One of my suppliers introduced me to a Burundi medium roast after I have been working on the columbian medium roast and trying it out and i would say the Burundi coffee has so much personality. The next coffee i am going to be trying out is Ethiopian beans and washed coffee beans and see what they hold. I know there is a lot of coffee to explore and try out, but i think that is what makes coffee exciting.

Grind Size of Coffee Beans

Grinding Beans for an espresso is very difficult when you have no idea, it can at least take you two kgs of coffee beans to get the perfect grind for you coffee espresso, yes you heard right , two kgs of coffee beans just to be able to get the perfect espresso shot . If it is to fine your coffee could have difficulty pouring. If it is two rough , then you will get a horrible tasting espresso that will just taste like you don’t love anything in this world , especially with dark roast since it is a bit of a bitter coffee. Just know you are looking for your coffee bean to bring out its flavor , and to expose you to its true self . Taking time and having patients with it and figuring out the perfect grind setting for your espresso is something you need to perfect as a barista. One way to know your on the right path is Cremer the foam on an espresso shot, it needs to be able to stay on your espresso shot for sometime and not vanish , the next is extraction time and ratios. Your have three types of pours, a espresso shot , a lungo and a ristretto. If your putting in 20 grams of coffee them your shot should pour 60 grams out of for espresso, going over the 1:3 ratio is going in to you making a lungo, I stick to the 1:1 ratio as I enjoy the ristretto . I use ristretto for my Americanos not espresso ratio ,for me it tastes really strong and beautiful. Using a scale can help you a lot to weigh your espresso shot specially if your searching for curtains flavors.

I would advise for you to grab a book or note pad and write down every espresso shot made. It will help you so much, so you can go back and see what you can change.

Coffee Plants

I bought coffee plants last year and thought they where really beautiful indoor plants to have for my room. It was abit challenging at first as we had a horrible winter that killed one of my trees , but so far they have been growing and looking pretty healthy , I’ve kept them in the small pots for some time , and I do look at moving them in to a bigger pot next year January. One of the main reason I got the plants besides for decoration was to learn how to grow coffee, as in the future I never know what will happen and practicing now is always the best. I would want to grow and plant my own coffee plants and use them in my shop . I do understand climate is one of the biggest factor for coffee plants which will be abit of a challenge but something I am prepared to learn and try figure out . I’m sure that’s every small coffee shops dream , to plant and grow their own coffee and bring something new to everyone’s tastes buds .

There are three plants I’m currently growing , and one of them I’m going to move in to a bigger pot and keep an eye on it.. and hope it shoots a few red berries later on in the future. They are pretty much easy to look after inside as long as it’s abit humid, good sunlight and the soil does not get completely dry. Christmas event

The event started on Monday and it has been really good we have had a great attendance as well as donation of the parcels for the old people. The hours though have been a bit hectic as I’ve been up till late at night . I really don’t mind it as it’s part of the grind. The first two nights we had 15 to 30 people , then the last 3 nights we had 40 to 50 people , in total for the whole week we had 200 plus people. I could not wait for the week to be over and get to Saturday and just relax for a bit. Last year was even worse and each night we had an attendance of 60 plus people each night, but that is because we had spread out the days a bit more and created flyers and posters, this year it was just one night after the other and only did online advertising. By the last night i was struggling a bit as my suppliers had closed though and i had sold out of a lot of items. Not coffee though mostly foods, and my lime milkshake.

Unfortunately the photos do no justice to seeing the Christmas lights in person around the nursery. It looks extremely pretty and lights up every part of the nursery... I have a lot of great great pictures but it has people in them, and i was unable to ask if they would like to be in my blog and post their faces on the internet, so i have to respect their privacy.
