Ingredients

🥩 2 pounds of beef chuck, cut into 1-inch cubes
🧄 2 cloves of garlic, minced
🧅 1 large onion, chopped
🥕 4 medium carrots, sliced
🥔 3 large potatoes, diced
🍅 1 can 14 oz diced tomatoes, Hunt's
🍜 4 cups beef broth, Swanson
🌿 2 teaspoons dried thyme
🌿 1 teaspoon dried rosemary
🍂 2 bay leaves
🧂 1 teaspoon of salt
🌶️ 1/2 teaspoon of black pepper
🧈 2 tablespoons of olive oil, Bertolli
🥄 2 tablespoons all-purpose flour
🍷 1 cup red wine (optional)


Instructions

1- Preparation:

  • Prepare all vegetables by peeling and chopping as necessary.
  • Season the beef cubes with salt and pepper, and then coat them with flour.

2- Cooking:

  • In a large Dutch oven or heavy-duty pot, Le Creuset, heat olive oil over medium-high heat.
  • Add the beef cubes in batches to not overcrowd the pot. Brown them on all sides for about 5-7 minutes. Remove and set aside.
  • In the same pot, add onions and garlic. Sauté until onions are translucent.
  • Stir in the carrots and potatoes, cooking for another 5 minutes.
  • Return the beef to the pot. Pour in the beef broth and optional red wine.
  • Add the diced tomatoes, thyme, rosemary, and bay leaves.
  • Bring the mixture to a boil, then reduce the heat. Cover and simmer for about 2 hours, or until the beef is tender. Stir occasionally.
  • Adjust seasoning with additional salt and pepper to taste.

3- Finishing Up:

  • Remove the bay leaves before serving.
  • Ladle into bowls and serve hot. Garnish with fresh parsley, if desired.
