‎My little Aiden has been sick for two days now, and he’s slowly getting better. Though he still needs nourishing food to help him regain his strength.
‎
‎I thought about what to cook that would be easy on his tummy and warm. Right away, Chicken Tinola came to my mind.
‎
‎It has a light, gingery broth that is exactly what he needs right now. 💛
‎
‎And because we have our own little garden, I didn’t need to rush to the market for ginger. I just stepped out and harvested.
‎
‎Some plants are still small because we only planted them recently, but I carefully chose the bigger ones.
‎

‎And look! There was already nice, fresh ginger attached to the roots. 😍 It made me so happy.

‎You know how expensive ginger has become here in the Philippines? It's ₱130 to ₱280 per kilogram.
‎
‎So having your own supply is such a big blessing and such a big help to the budget.
‎
‎It really proves that just by planting and caring for them, they’ll give back so much. 💚
‎
‎After harvesting it, I just removed the soil, trimmed away the roots and green stalks, and I got a fresh ginger ready to use. It is so wonderful because you can add it to salads, sauté it with garlic and onions, or simmer it in soups, just like what I did today. It adds a gentle warmth and aroma that makes the soup so comforting.

‎I also prepared everything else, like the chicken, fresh kangkong leaves, and a little fish sauce.
‎

‎I just let it simmer until I have the broth that I want.
‎

‎When I served it to Aiden, he loved the broth so much that he always asks for more.
‎
