A Simple Dinner Made Possible by a Generous Neighbor: Nothing Fancy, Just a Healthy Homemade Dinner
Hello Hivers 🥰! So just before going to bed with Aiden I wanted to write a very short little story of something fun on our dinner last night.
So earlier during the afternoon, I wasn’t sure what to cook.
but I was chatting to my neighbour whilst cleaning outside in my yard, I noticed she had an awesome amount of sweet potato leaves. One time, when she saw me buying sweet potato leaves from a vendor, she told me that I could just get some from her garden instead of spending money to buy them. She is amazing! So I was thinking "why not."
She had said yes to me collecting some from her yard. Whilst I was collecting she had told me I could collect some next time without asking her. Hehe she is such a lovely neighbour!!!:D She had given me an abundance of chilies a few days ago, and I am quite excited to make them into spicy vinegar. It means so much her being so generous towards me which makes me feel grateful even before when I was still new in this place.
So finally I ended up cooking my sweet potato leaves. How I made them was really simple. I had blanched them for about a minute in some boiling water. Then I had prepped some tomatoes and onions for my leaves.
I also added some soy sauce and we had a super quick, easy salad! There are many ways you can cook sweet potato leaves but I absolutely love this way as it is super easy.
Not only is it easy to make, but they are also full of nutrients. They contain vitamins A & C and also Iron. As my neighbour had so many sweet potato plants and was being so generous to give them to me I didn’t have to spend any money. They were free, full of health benefits and the best part, they ones being shared with love. We can often be so grateful for people who are generous towards us.
I really appreciate my neighbour.
I will also try to be this kind towards others when I can. Anyway this is my quick story. 😊
Thanks for reading! I hope you enjoyed. Have a lovely day with lots of blessings. ❤️
