During the height of pandemic, my wife and I were just by ourselves, isolated from the society. She got contacted by Covid-19 in fulfilling her oath and duty to serve the patients, the institution and the country as a nurse. Two of the symptoms she experienced were loss of taste and appetite.
For Better and For Worse, And Make My Spouse Better
It’s not easy to be isolated while going through something difficult. We were so close yet so far as she was in different room. Good thing there’s video call. We could still see each other. I had now a duty to take care of her and fed her with nutritious, good-looking, mouth-watering, delicious foods. So I was thinking that I would make sure that what I was going to serve were very appetizing to look at, hoping that it would help her ate more and eventually recovered from the illness.
Kangkong With Love
One of the recipes I made was the vegetable dish above. It’s not just your ordinary kangkong recipe as you can see. Yet it’s very easy and fast to cook. It’s main ingredients are kangkong and tomatoes, and of course, with love. Does it look appetizing? Let me know in your comments below.
Simple Recipe Yet Flavorfully Healthy
You can cook this recipe in less than 10 minutes. Below are the ingredients you need to prepare:
First, heat the pot. Put a little oil. Once hot, saute the onion and season it with a little bit of salt and pepper, then the garlic. Follow the sliced tomatoes. Let it simmer for 2-3 minutes until the juice of tomatoes is mixed with the other spices. Put a little chili flakes to have a bursting flavor. Then flush it with your wine/vinegar. Add some basil leaves. Simmer it for another 2-3 minutes and taste it. You may add a little sugar as preferred. Once taste is okay, you may add now the kangkong then it’s good to serve.
My Wife’s Request
Just recently, I was asked by my wife to cook a kangkong. I knew that she meant this recipe. And I was delighted to cook it again for her as she would be transported back to the time when I took good care of her. Each time she will taste it and for a lifetime to come, she will recall a time when I showered her with unwavering love. Giving her all the support and protection that she needs as expected to a husband. The only difference this time is that she’s going to experience the food with a fully recovered sense of taste.
