Meal planning has become vitally important during our current rolling blackouts; yes, we are currently once again experiencing what is known as loadshedding, and I've been talking a little about that lately.
As our power utility have grossly neglected to do the task they get paid huge sums for, we currently have a power crisis!
At least there are schedules when the power is turned off, and this is one thing they do get right as the power is cut according to a planned schedule as regular as clockwork!
Like right now!
I'm using hubby's mobile network as my cellphone network provider doesn't maintain their battery backup and dies!
We just love a green salad and fortunately the curly lettuce is growing everywhere in the garden; one thing the marauding monkeys are not interested in!
Meatballs in the making as these can be made in advance and eaten cold with a quick salad, something that's been on the menu at regular intervals lately.
Reminds me of the days many moons ago, when picnicking in a local nature reserve, a park or at the beach, when our children were young; meatballs ALWAYS featured on the menu!
I like adding loads of parsley & a little diced fresh mint, both from the garden, as well as a grated carrot, breadcrumbs and an egg to bind it all. My favourite spice for meatballs is a teaspoon of coriander as well as crushed black pepper.
I have to work quickly so form the meatballs by hand and shallow-fry it, before the lights go out!
Delicious although slightly overdone as I was rushing about doing other tasks that require electricity.
The washing machine was working overtime to get the laundry done, water put into a flask so we can still have a cup of tea or coffee plus I had to do a quotation for a prospective guest in our bnb!
I was running around frantically as I almost forgot about the power outage!
Simple fried eggs on toast is something hubby really enjoys and is so quick to throw together.
I have a vivid imagination and the yolks look just like two eyes staring at me, accusingly, as I tend to overthink; they could have been two little chicks running around, and I'm sure my vegan friends think alike!
We do have some days when the loadshedding is put on hold, and that's when I can do a nice roast meal - lemon & fresh herbs chicken, using thyme & rosemary from the garden, left to marinade for a couple of hours before roasting on a high heat to get the skin crispy; roast potato wedges with caramelized onions, delicious roast butternut and sweet potatoes with super fresh broccoli made for a delicious meal, enjoyed by all, no candlelight dinner on this occasion;)
To end the meal, one of our favourites is stewed Granny Smith apples like Grandma made, served with custard. Something I often make when I've run out of time to make a proper dessert
I hope you've enjoyed this peek into my loadshedding meals, something that's going to be happening more often, as the power utility have failed and it would take a miracle to restore the problems at all the power stations!
