My attention is easily accosted by new recipe projects. So when I saw a video about making pan baked bread, this was added to the todo list. I've already been baking beer bread for years, so a new bread variation was appealing and wouldn't be stretch to accomplish.
The pan baked bread is one of the simplest recipes to do. Flour, yeast (or baking powder) and water. I've been using spelt flour lately and sometimes a bit of rye also.
Mix your dry ingredients, add the water and mix until it reaches a dough consistency. Then cover it and leave the dough to rise.
Cover the pan with flour so the dough doesn't stick and place a good portion on the hot pan. I usually over the pan with a lid to trap the heat and speed the process.
When it has a nice crust, serve fresh and hot. Who doesn't like hot bread? 馃榾
You could of course experiment add all sorts of things to dough. Cheese is high on my list.
