Beautiful scarlet kale revealing its purple hues from lack of sunlight as the chlorophyll starts to fade. The plant will start to produce more sugar to withstand cooler and freezing temperatures. Kale can tolerate temperatures down to 10 degrees Fahrenheit , making it a great candidate for a fall and winter crop. The leaves also thickens and becomes crisp! I also grow dinosaur or lacinato kale, Russian and Christmas Red kales. Besides kale I grow collard greens as well, the varieties pictured below is Georgia Heading Collard and one of my purple tree collards.

Both Collards and Kale are nutrient dense and packed with antioxidants, a good source of calcium, vitamins A, C, K , omega-3's, magnesium , protein and much more!
