Hallo, heute sah ich ein Bild von meinem Freund im Facebook der gerade Bubur Tinutuan isst. Es hat mich sofort sabbern lassen 😅. Bubur Tinutuan ist ein typischer weich gekochter Reis mit gemischtem Gemüse, der in Manado, der Hauptstadt der Provinz "Nordsulawesi", oft zum Frühstück serviert wird. Sulawesi ist eine der 5 größten Inseln des indonesischen Archipels und liegt ziemlich nahe zu Philippinen.

Anstatt einfach nur zu sabbern, beschloss ich dann, es für unser heutiges Abendessen zu kochen. Ich habe noch etwas Gemüse und geräucherten Lachs im Kühlschrank, also... heute haben wir ein tolles Abendessen

Es ist ganz einfach zuzubereiten, und Sie können meinem Rezept hier folgen:

  • 75 gram Milchreis
  • 1150 ml Wasser
  • 100 gram Kürbis, gewürfelt (falls vorhanden. Wenn es nicht da ist, sollt ihr das Wasser ein bisschen reduzieren)
  • 2 TL Salz
  • 50 gram Süßkartoffel, gewürfelt
  • 1 kleine Döse Mais
  • 1 Bund Wasserspinat, kurz geschnitten (falls vorhanden)
  • 2 Bund Spinat (Baby Spinat wäre am Besten)
  • 1 Karotte, klein gewürfelt (ca 5mm *5mm)
  • 1 Stiel Thai Basilikum (falls vorhanden)
  • 2 Zehen Knoblauch (zerhackt)
  • 1-2 Stiel Zitronengras (kreuzweise geschnitten)
    Etwas Öl mit neutralem Geschmack (zB Rapsöl)

Kochanleitung:

  1. Der Knoblauch und die Zitronengrasstückchen werden mit etwas Öl angebraten, bis sie schön duftet.

  2. Den Reis und Wasser in den Topf hinzufügen und lass ihn kochen.

  3. Wenn das Wasser die kochende Temperatur erreicht hat, gebe die andere Zutaten alle in den Topf hinzu! Ihr sollt den Reis ab und zu langsam rühren.

  4. Nach 3 Minuten sollte die Hitze auf niedriegere Stufe reduziert werden. Den Reis wird mit kleinem Feuer weiter gekocht werden Bis das Wasser fast alle vom Reis absorbiert worden ist. Im Prinzip ist es so ähnlich wie Milchreis, es ist nur nicht süßlich. Die Indonesier mögen dies zum Frühstück essen.

  5. Das Bubur Tinutuan schmeckt am Besten mit einem Fischgericht und Sambal Dabu-Dabu Lilang (so eine Art von Salsa, je schärfer desto besser)

Das Rezept für Sambal dabu-dabu lilang ist folgendes:

  1. 1 rote Zwiebel, klein zerhackt
  2. 10 Cherrytomaten oder 3 Romatomaten, gewürfelt
  3. Eine halbe Zitrone, gepresst
  4. 1/3 TL Salz
  5. 1 TL Zucker (Palmzucker falls vorhanden, oder Braunzucker wäre auch ein guter Ersatz)
  6. 2 Peperoni oder Thai Chili (je schärfer desto besser, aber es ist euch selbst überlassen), klein zerhackt

Anleitung: Alle Zutaten sollte gemischt werden und wenn ihr wollt, könnt ihr das frische Sambal mit einem Esslöffel erhitzen Öl übergießen. Aber man kann es auch ganz frisch einfach so servieren.

Hallo, today I saw a picture of my friend eating Bubur Tinutuan and it made me drooling right away 😅. Bubur Tinutuan is a typical soft boiled rice with mixed vegetables which is often served for breakfast in Manado, the capital city of the Province "North Sulawesi". Sulawesi is one of the 5 biggest island in Indonesian Archipelago and it is quite near to Philippine.

Instead of just drooling I then decided to cook it anyway for our dinner today. I seem to still have some veggies and smoked salmon in the fridge so it's gonna be a great dinner today.

It's quite easy to make and you can follow my recipe here:

  • 75 grams of short grain rice (which is good for making rice pudding)
  • 1150 ml water
  • 100 gram pumpkin, diced (if available, in another case you better reduce the water amount and the salt a little bit)
  • 2 tsp salt
  • 50 gram sweet potato, diced
  • 1 small dose of corn
  • 1 bunch of water spinach, cut short (if available)
  • 2 bunches of spinach (baby spinach would be best)
  • 1 carrot, finely diced (approx 5mm *5mm)
  • 1 stem of Thai basil (if available)
  • 2 cloves of garlic (chopped)
  • 1-2 stalks lemon grass (cut crosswise)
    Some oil with neutral taste (e.g. rapeseed oil)

Cooking guide:

  1. fry the garlic and lemongrass pieces with a little oil until they smell nice.

  2. add the rice and water to the pot and let it boil

  3. when the water has reached the boiling temperature, add the other ingredients all in the pot! You should stir the rice slowly from time to time.

  4. after 3 minutes, reduce the heat to a lower level. The rice will continue to cook with a small fire until almost all the water has been absorbed by the rice.
    Actually it is similar to rice pudding, it's just not sweet. Indonesians like to eat this for breakfast.

  5. Bubur Tinutuan tastes best with a fish dish and Sambal Dabu-Dabu Lilang (a kind of salsa, the hotter the better)

The recipe for Sambal dabu-dabu lilang is as follows:

  1. 1 red onion, finely chopped
  2. 10 cherry tomatoes or 3 tomatoes, diced
  3. half a lemon, squeezed
  4. 1/3 tsp salt
  5. 1 teaspoon sugar (palm sugar if available, or brown sugar would also be a good substitute)
  6. 2 peppers or Thai chili (the hotter the better, but it's up to you), chopped up small

Instructions: All ingredients should be mixed and if you want you can pour a tablespoon of heated oil over the fresh sambal. But you can also serve it very fresh just like that.
