En: Hello. I haven't shared for a long time. Today we are making phyllo bread. I'm not talking about phyllo pastry, baklava. This is the kind that is eaten with meals. This bread is consumed in daily life, especially in the Taurus Mountains and in the villages in many regions.
We knead the dough from flour, salt and water. We made meringues so that a loaf of bread comes out. We call meringues when the dough is divided according to the size of the eye and hand and made into balls in this way.
Then we make it into basing. We call the small piece of dough as bazlama.
Then we enlarge the flatbread to become a phyllo dough. This job really takes skill.
Then we bake the phyllo bread on the sheet.
Finally, we stack it like this.
This bread stays fresh for 4-5 months, especially in winter. It is durable when stored in suitable conditions. In summer, this period is slightly shorter due to the hot weather.

Tr: Merhaba. Uzun zamandır paylaşım yapmıyorum. Bugün yufka ekmek yapıyoruz. Börek, baklava yapılan yufkadan bahsetmiyorum. Bu yemeklerin yanında yenilen türünden. Özellikle toroslarda ve bir çok bölgede köylerde günlük hayatta bu ekmek tüketilir.
Un, tuz ve sudan hamuru yoğurduk. Bir yufka ekmek çıkacak şekilde beze yaptık. Hamurun göz ve el ölçüsüne göre bölünerek bu şekilde top top yapılmış haline beze diyoruz.
Daha sonra bazlama haline getiriyoruz. Yufkanın küçüğüne bazlama diyoruz.
Sonra bazlamayı yufka olacak kadar büyütüyoruz. Bu iş gerçekten bir ustalık gerektiriyor.
Sonra yufka ekmeği sacda pişiriyoruz.
En sonunda da bu şekilde istifliyoruz.
Bu ekmek özellikle kışın 4-5 aya kadar taze gibi durur. Uygun koşullarda saklandığında dayanıklıdır. Yazın bu süre havanın sıcak olmasından dolayı biraz kısalır.
