Amazing to hear! And I truly would love to see her happiness when she gets to eat that toast. ;) It truly is sad that we commercialized so many things. Bread is truly a work of art when done the old way. It should have never been changed and the sad thing is that the art has been lost and a lot people don't even know how to make TRUE sourdough bread. Well maybe saying it has been lost is a bit strong but certainly forgotten. I teach my daughter the old way. I even taught her how to do the Friendship Breads and Amish Bread wich is bulk fermenting in long and slow batches. I'm glad to hear all these wonderful stories of people with gut issues that have learned that they can in fact tolerate sourdough bread! Thank you for sharing!
