I could have sworn that I posted it already and I was just going to give you the link, but apparently not. I usually provide metric measurements when I post, but here it is. At the top is the original recipe and at the bottom are the changes I made to the spices.
Spinach Squares
Total Time: Prep: 10 min. Bake: 30 min. Yield: 4 dozen.
If you grate your own cheese, substitute fresh spinach, and grind your spices, it takes longer. These are addictive.
Ingredients
2 tbsp butter, melted, divided
1 cup all-purpose flour
1 tsp baking powder
3/4 tsp salt
1/2 tsp dried oregano
1/4 tsp dried basil
1/4 tsp dried thyme
1/4 tsp pepper
3 large eggs
1 cup whole milk
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
2 cups shredded cheddar cheese
2 cups Monterey Jack cheese
1 cup chopped onion
sliced pimientos, optional
Directions
- Brush the bottom and sides of a 13x9 inch baking dish with 1 tbsp butter, set aside. In a large bowl, combine the flour, baking powder, seasonings, eggs, milk and remaining butter. Stir in the spinach, cheeses and onion. Spread in prepared pan.
- Bake, uncovered, at 350°F for 3-35 minutes or until a toothpick inserted in the center comes out clean and the edges are lightly browned. Cut into squares. Garnish with pimientos if desired.
I substitute ground cumin and coriander for the oregano, basil & thyme. 2/3 tsp cumin and 1/3 coriander. 1/4 tsp smoked paprika. I don't use the pimientos but you might want to add some heat.
