Love to see those colors in the soup pot. I haven't lived anywhere that has affordable fresh thyme and red peas in years, so this is one of the dishes that I only make when I'm visiting the USA. Something about the flavor combo of scallion, pimento, Scotch bonnet, and fresh thyme flavors is so right. !wine
