When it is very active, it is not allowed to climb the volcano, but it is a custom that the people who live around it have always had, since before the colony, ceremonies are held to ask for the rain to arrive that irrigates the crops and not to fall hail that damages them, this is currently done by the inhabitants of Santiago xalitzintla, one of the closest towns, leaving food as an offering to the mountain, but the ancient settlers also went up for something incredibly valuable at that time that we now always have available and just a few steps away ice.

Refrigerators are something that have existed in the average home for 70 years, but before the refrigerator, everything that was not preserves or brines had to be consumed the same day it was cooked and everything had to be bought fresh from the market to prepare it. every day.
But if by chance you lived near a snowy mountain you could store food in these places naturally refrigerated and best of all you could eat flavored snow and refresh yourself with iced fruit waters, something that the rest of the people who do not live near of a snowy mountain could not do until 400 years later.
In the conquest from 1600 the government of New Spain controlled through monopolies the places where ice and snow could be collected from the mountains, they were called estancos, they were controlled by rich people and they were the only ones allowed to exploit the valuable frozen water resource.

The cost of fruit ice cream or ice cream, which was already prepared with milk and eggs, was inaccessible to common people and this gave rise to the functionaries, clandestine snow vendors; imagine ice cream was illegal for people like you, that was crazy.
This lasted until 1854 when, by means of a decree, the snow shops were dissolved, freeing up the business for the rest of those interested and ordinary people were finally able to enjoy an ice cream from time to time, in celebrations such as patron saint festivities until refrigerators arrived and our lives became infinitely easier.
