Chicken soup has been given to sick children and adults for ages. One of my sisters cooks mean chicken soup whenever I am under the weather. I make my own homemade chicken soup but it is not as good as my sisters recipe. my children are sick and they have a cough and congestion so I made a large pot of chicken soup to deliver to them. I asked my sister to share her recipe with me so that they could get all of the benefits from the ingredients.
Fresh vegetables are seared in the pot first. I used onions, celery, green bell peppers, fresh ginger root, fresh garlic, poblano peppers and carrots.
The chicken that I used was skinless chicken thighs. The dark meat of the chicken gives off more flavor in the broth. I seared the chicken thighs in the same pot with the vegetables before I started to add water.
Once the chicken and vegetables started to boil, I then added my other dry spices. Are used smoked paprika, granulated garlic, thyme, oregano, a little salt and coconut curry powder.
I added some diced potatoes to the boiling mixture.
I also added some vegan vegetable bouillon because it has a very good flavor. I know that that seems silly because I put the vegetable bouillon in with the chicken broth, but it really adds to the flavor of the soup.
The last thing that I added was some cornstarch dissolved in a cup of cold water to help thicken the broth.
This soup is very flavorful and it is good for you too. Fresh garlic and ginger root have anti-inflammatory properties. Ginger root is also used to help with gastrointestinal problems.
I kept a bowl out of the pot for myself to eat because nothing soothes like a hot bowl of chicken soup.
