I think its because they are generating too much code, and someone is going to need to verify that code before it can be considered safe. You can consider a platform like Steam that sells games. After AI, there are a ton of games released, but they need to make sure the game is safe, and other things before it can go up.
RE: What is the Jevons paradox? Demand for Software Engineers may increase, not decrease in the short term due to AI. Building code is going to skyrocket.
