Last week, something made these sweet treats cross my mind. I am not sure what, but I'm glad it did. I have not made these in years. They are fast and easy and cheap ! .... but most of all ... delish ! That is, if you like fried pastry and cinnamon and sugar.
The ingredients are simple, a little oil (whatever kind you like), some 10 inch tortillas, white sugar & cinnamon.
First mix your cinnamon and sugar. I made too much for the few I was going to cook, but I'm sure I'll find more use for it later. I mixed about a half of a measuring cup of sugar and about a teaspoon and a half of cinnamon. You can use more or less cinnamon if you like it strong or lighter. You can leave it in the bowl to sprinkle with your fingers or a spoon, but I had this handy little sugar shaker, so I put the cinnamon sugar mix in it to dust on after the tortillas cooked.
You will need a place to put them when they come out of the hot grease. I normally use a plate with a few paper towels, but this time I used one of my little cake cooler racks with a paper towel on top.
You don't need your oil extra deep in your sauce pan, just enough the tortilla can float.
Turn your burner on to medium... or a little less and let the oil get hot. Once it is hot, lay your tortilla in. It should start bubbling around the edges immediately
I think this tortilla is smiling.
It really doesn't take long for these to cook if your oil is hot before you put them in.
It is good to flip them every 15 seconds or so (maybe less) because you can't see how brown they are getting on the bottom and they can get overdone pretty fast.
As soon as they are done, lift them out onto your plate to drain and immediately sprinkle them with the cinnamon sugar while they are still wet and it will stick
I had my oil too hot in the beginning and over-browned the edges of the first one before the center got crispy. Waaahhh Waaaaahhhh....LOL.. Throw it away? Ummmm... no !, cut the edges off, the rest of it is fine ! (The world again, according to me)
I am use to parts of them having some bubbles form as they cook, but on a couple of mine the entire tortilla blew up like they were rehearsing to join the Hootie and the Blow Fish band ! That may have also been because my oil was too hot. I had to puncture them with a fork so the tortillas would go a little flat again in order for the edges to cook instead of just the center of the blow fish. LOL
No doubt they are best when freshly cooked while they are nice and crispy. Although they still taste good later, they don't hold their crispness long.
I guess I really should have waited till after supper to make them, because I couldn't quit taking another bite. 🤣
That's it ! Simple, fairly fast and yummy !
It's Saturday, I worked a little OT this morning (again, not voluntary). It's a long weekend though as Monday is a holiday, so I think I'm over it already. I have done a few things around the house, including rearranging some stuff around my kitchen and relocating my rolling island cart. I've even had my Saturday bath already ! LOL I
