During this lockdown period, the boys had developed sweet tooth syndrome. Being at home 24/7 had them go to the fridge often to search for food. And when fruits had finished, the eldest one would start looking for chocolates and sweets. Today, I have decided to stop all these sugar junk food hunting and made barley drink for them.
Barley has a lot of health benefits. It is packed with nutrients and minerals as well as fibre to aid digestion. I remember a doctor once told me to make this barley drink once a week for the family, as the water also has some properties to help 'clean' the body, meaning to help flush out any toxins in the body. This will reduce bloatedness or feeling stucked in the body. Because I know the boys do not take plain barley drink, so I aim to add some sweetness but with a twist of health.
Barley drink
Super easy to made. Add water into the pot, add in barley and boil for half an hour, then I add in dried winter melon for the sweetness, boil for another half an hour. The dessert is ready to be consumed. And you do not need extra sugar as the winter melon already has some sweetness plus a bit of sugar coating (although not alot, thank goodness). I love this barley drink with natural sweetness from the winter melon.

We added some ice cube as the weather was really warm. But, my husband prefers a warm hearty bowl of barley drink.
