After a long working week, the weekend is relaxing a little worked in to garden and went for a walk to find some mushrooms and berries. And after that have some fun food. I made some muffins using cherries that I picked from the garden at my workplace. They were slightly sour.
Ingredients:
1 cup of cherries pitted and chopped.
1/2 cup of oatmeal
3 tbsp brown sugar
2 tbsp granulated sugar
1/2 cup almonds peeled and soaked
1 tsp baking powder
1/2 tsp baking soda
2 pinches of salt
2 tsp vanilla
1/2 lemon for juice and zest
4 tbsp coconut oil
some candid cherries and fresh red currant.
1.5 cups bread flour.
Making almond cream:
Soaked almonds in water and peeled them.
Using a mixer grind them in fine paste using little water.
making oatmeal cream:
Added hot water to the oatmeal and soaked it for 2 minutes.
Mixed 1 tbsp coconut oil in and made a fine paste using the mixer.
Took out the seeds from cherries using chopsticks.
made lemon juice and zest from lemon.
In the flour added baking soda and salt.
then baking powder
lemon zest and mixed together.
Poured oatmeal cream into the mixing bowl.
Added 3 tbsp coconut oil.
Vanilla and brown sugar+ granulated sugar mixed all together.
In a mixture of sugar oatmeal coconut oil added almond cream
Gradually added flour mixed with baking soda baking powder and lemon zest salt.
mixed dried and wet ingredients together. and then cherries.
Mixed all ingredients using the folding method. Avoiding overmixed
preheated oven for 15 minutes at 180 C
In the muffin tray placed muffin paper cups, and filled the mixture in all cups.
The muffin tray went in the preheated oven for about 22 minutes.
And the muffins are ready.
after taken out from the oven kept them cool down for around 30- 40 minutes meanwhile made a glaze using
powdered sugar 2 tbsp
few drops of lemon juice
a little fresh cherry jam
Peeled paper from muffins and glazed them.
put some candied cherries on the top.
