Hello on this beautiful February Friday! (Okay so it's actually freezing and gray ...
... here but we're trying to be positive.)
So I was in the mood to make some pancakes, but not just plain ones because you know I can't leave things alone. Although, I wanted them simple and of course you can never go wrong with chocolate. These pancakes don’t need any fancy ingredients and they are made in the blender. If you don’t have a blender or food processor you can easily make these by just using oat flour. I’d replace the 1 cup of oats with about 1/2 cup flour.
Let's talk toppings: I'm always partial to berries and nut butters but these would also be good with traditional syrup. You could also try making your own berry sauce, flavored nut butter, caramel, the skies the limit. Clearly we're getting into more of a dessert here so maybe just stick to some coconut yogurt and fruit. What other things do you put on pancakes? Seriously, I'd love to hear any unique or out-there ideas you may have. Let me know in the comments!
