My helper friend, who is a major pepperhead, says that when the plant is stressed it gets hotter. By chance, did that pepper have small brown tracings on the skin? I forget what he called them, but they are an indicator of increased heat.

As pepper will never overwinter here, I can't ask him about what happens when you can overwinter them...
