In Italy they use a variety of very small potatoes that are sold in nurseries, especially for planting.
On the other hand, sprouted potatoes are traditionally used (those we buy at the supermarket and after a few days they begin to emit their first sprouts)-.
The potato is peeled when used in food and the sprout part is left with the skin and a very small piece of the potato for seeding.
My father, on the other hand, I remember that he cut the potatoes into three or four pieces and planted them (especially those very twisted potatoes with many holes, which made it very difficult to peel them in the kitchen.
