I 'make do' with what I have when reading a recipe. I try not to make unnecessary trips to a store when I have alternatives to use that are just as good.
Instead of lettuce, I used Kale, (healthier too); instead of baby potatoes, full sized ones cut up worked just as well. The dressing was similar to the recipe, but alterations were made there as well.
I was a wonderful healthy salad, full of flavour and enjoyment. Domathies were served as a side and the red wine, was beverage of choice.
The dressing: Red Wine Vinegar; mustard powder; olive oil; fresh basil and mint (about 6 leaves of each); salt and pepper; a teaspoon of honey.
The salad: Kale; quartered tomatoes; a can of crabmeat (not usual for this salad) and a can of chunky tuna; Sautéed mushrooms in butter; hard boiled eggs; french sliced quarter of red pepper; Green pitted olives; Capers; salad spices; chipotle flakes.
