We love to eat roasted sunflower seeds either in their hull (which are cracked open with your teeth) or hulled and added to trail mix. They have a mild, nutty flavour. We also add them as a grilled topping to macaroni cheese, bake them in bread, add them to stir fries and salads.

The sunflower seeds below were taken from the Russian sunflowers that we grew in our garden. We removed some from the sunflower head to grow in future years and left some out for the birds to feed on.

Sunflower seeds are highly nutritious. The majority (black seeds) are farmed for oil while the black and white variety can be eaten. They are high in vitamin E and selenium which function as antioxidants and protect your body against free radical damage. They also contain B vitamins, iron, magnesium, zinc, copper and manganese.

Sunflower seeds are reputed to lower inflammation, reduce the risk of heart disease and type 2 diabetes.
