how do you know when time is up? I can't be looking at the screen without stopping typing.

Ah, I - more or less, but not very fast - touch type. Taught myself when I was 16 (long time ago!) so I'm always looking at the screen.

Edit: It took a while to adapt from QWERTY TO AZERTY (French keyboard) when we moved here 15 years ago!
