Both of your loaves look pretty, but I feel you on the oat loaf being too soft - texture is so important. A food can't win by looks alone! The way you described its texture, it made me think of "un-slicably soft" yeast dinner rolls, which are good, but kinda like dessert masquerading as bread.
Now that stores have limited availability, it can be hard to decide the wisest way to use the most desired ingredients, at least it has been that way in my kitchen. Things will probably go back to "normal" before too long though. You are full of talent! Thank you for sharing your recipes. I hope you were able to get your flour order filled!
