How's everyone doing this Sunday? Beautiful? Ya, mine started out sublimely beautiful... and then turn out to be a burning hot Sunday... What happen?

Let's start with this beautiful morning... Beautiful sunny Sunday morning... I have been wanna try to make chili garlic sauce, the one that accompanies the chicken rice. All the ingredients are ready... red chili, galangal root, garlic, shallots, white vinegar, water, salt and sugar.

I couldn't really eat hot and spicy food, so I decided to take out all the seeds from the little red chili.

Put the chili, galangal root, garlic and shallots into the blender. Add some water and blend it well. Then add in some white vinegar, salt and sugar and mix well. And voila, my chili garlic sauce is done. Even without the chili seeds, my chili garlic sauce is still a bit too spicy for me to handle. I hope by adding more white vinegar and sugar and let it sit in the fridge, it will be less spicy. But I am not sure about this.

Ok, so far, everything seems fine and indeed a sublimely great beautiful Sunday, right? NOPE! I didn't wear any gloves when I was prepping the little red chili. Coz I don't really like to wear gloves when I am in the kitchen. Half way through the preparation of the chili garlic sauce, one of my finger feel a pricking sting-kind of pain. I thought I accidentally hurt my finger and I didn't think much. But along the way, the pain became more and more significant and there's a burning hot feel. I still thought there's a small wound on my finger and that's it. I didn't think much.

Not until I finished the chili garlic sauce, the burning hot pain became more and more unbearable. I had to submerge both my hands in the cold water. The minute I got my hands out of the water, the burning hot pain came back.

I couldn't understand why therefore I asked Mr Google. And found out that this is because of the capsaicin in the chili. Capsaicin is an active component of chili peppers and is an oil. Washing with soap and water doesn’t stop the heat because oil-based capsaicin does not dissolve in water. And I didn't know this at all!!! 😭😭😭🌶️🌶️🌶️

My whole Sunday afternoon is totally spoilt. I couldn't do anything at all, both my hands are in pain. I feel like my hands are on fire, yes, ON FIRE! 😭😭😭

Then my husband poured me a plate of milk and asked me to submerge my hands into the milk. It should make me feel better. That's what Mr Google said...

After putting my hands into the milk, I do feel better, the burning hot feeling subside a bit. But still it will come back. So I dip my hands into cold water. Back and forth, in milk and then in cold water. Repeated this for a few times. 5 hours later only I feel a lot better and don't have to keep my hands in cold water. And I can type and share my "painful" experience now...

So, please, please, please wear gloves if you have to deal with chili especially you are going to take out the seeds... This is really an unforgettable experience...
