It’s a sappy kind of day!😎👍 We headed out to begin the boiling process for our Big Leaf Maple tree sap! Everything was ready to go.
We set up the turkey fryer, but before lighting it, we needed to strain that 5 gallon bucket of tree sap, hence the cheesecloth you see draped over the pot. I fixed it in place with a super sized rubber band. 
Once that was done, I took off the cloth and put the lid on.
Maple tree sap needs to boil down and become concentrated. Boil the water out, and the sugar remains.
As you can see, it was in a full rolling boil. Notice in this next picture, the color difference of the sap from the previous picture.
It’s turning a light golden color and the smell reminds me of kettle corn. It’s almost buttery sweet smelling. The light breeze would blow the steam my way every now and again.
We boiled approximately 9 gallons down to about 3.5. However, it is a 2 day project as we ran out of daylight and time. Tomorrow morning, we’ll finish up the syrup and also roast that coffee for my customer. Another busy day for sure!
I think we’ve decided the maple syrup adventure is going to be an annual thing. My youngest son is interested in having some which would make a special present!
