Why not use KDE Neon? It's the latest and greatest from KDE, and it's I think the official KDE. And it is also Ubuntu.
Are you using Nivida or AMD GPU?
And what sort of problems do you run into with discrete graphics?
Usually people like PopOS for it's built-in switching between integrated & discreet, but Ubuntu also has this ability.
But yes, I also use Ubuntu for all of my LAMP servers too. I think I have one that's Arch, and that's because it's using an Arch-based Docker container with NGINX instead of Apache for a module that integrates RTMP with FFMPEG. So I can livestream into the server, and it can multi-stream to Youtube, Dlive, Instagram, Facebook etc. using specific credentials & FFMPEG encodes to their individual formats.
