That's BIG! Thank you for being open minded and not fixed in your thinking/actions. That's all I can ask for, and I think that's all it takes. Clearly you have put some thought into this.
I agree about eggs. I don't find them to be harmful to chickens. That said, one thing many backyard hen operations do is grind up (kill) male babies, because they have no use for thousands of roosters. So 50% are slaughtered as newborns by cutting and smashing them up, or drowning them. I know they're just newborns, and just birds, but still, surely there's another way! That said, rescue hens are a great idea. The damage was already done to their brothers, and now they need some compassion. Chickens have been genetically altered over hundreds/thousands of years, and they don't survive well on their own anymore. You're right, they're sort of pets. Not in my house, but yeah, hehe.
And I have cooked and served meat since giving it up. I don't really like doing it much, but I went 40 years with meat on my plate, so I can stomach being around it no problem. Just not a fun thing to do anymore. I have a lot of fun with foods, don't get me wrong, just not with anything that came from something that had to suffer to make it happen. I don't mind being around people buying/cooking/eating animal products, and try not to preach unless somebody wants to talk about it. Then I'll give my opinion, no problem! (Reminds me of that joke, how do you know someone is vegan? THEY'LL TELL YOU! But to be honest, I find most of us are fairly quiet about it, and will only become passionate about it once engaged. Then, we're more then eager to help somebody else make the connections, get the info we think they need, and so on. But the joke is still funny... I get it!)
And of course we can't exclude all harm 100%. The point (imo) is to do the best we can. Factory farming sentient beings so we can eat cheeseburgs or porkchops at every meal isn't doing the best we can do.
Don't think I've had fake bacon. Oh, "bacon bits" on potatoes, if that counts... but that was 30 years ago. I think you mean newer stuff like Beyond meat? The burgers aren't too bad, but expensive, and they've gone down in quality since the first ones came out. Now they're frozen pucks of low quality pea/bean protein and coconut oil, but at the same price. My wife and I were eating them regularly but found it wasn't good for our metabolism.
I could go for a good scrambled eggs on toast, though. There are great replacements for almost all uses we have for eggs, EXCEPT just plain eggs. There's no good vegan poached egg on toast, for example. But hey, maybe we're getting close to Star Trek replicator technology? Eggs made by a machine from basic building blocks are vegan, hahah. And you could program-out those slimy umbilical-cord things between the yolk and the white, bonus!
