I will give this a try!! I cook something similar by sauting colored peppers first, tomatoes, and onions. Once simmered, I add the eggs until cooked. My recipe is served with a piece of bread.

I love dates, especially Madjoul dates. Recently, I have been stuffing them with Biscoff butter (Lotus Butter) and dipping the whole date in chocolate. Kids love that a lot.
