That looks delicious! I live in 🇳🇿 Aotearoa / New Zealand. We call sweet potato "kūmara" here. As a diabetic myself, we always try to replace white starchy potato with kūmara because, as you say in this post, it is known to be a healthier option for diabetics. In our household, cooking with kūmara generally only extends to boiling it or grilling it though, as we try to avoid any deep-fried foods. However it does depend on the type of oil being used for frying. Some oils contain less saturated or trans fats, which many dietitians and diabetes specialists recommend against. By adjusting the oil used; replacing the sugar in your recipes for stevia; and being mindful of the type of cheese used (some cheeses are healthier than others for diabetics), I'm sure these two recipes could become healthy snacks for diabetics too.

Your post has been curated by the Hive Diabetes Peer Support (HDPS) Community. We are a new HIVE Community created recently, and officially launched on 1-Apr-2022, here on the social blockchain and on Discord. Our goal is to become a place to discuss your own or a loved one's experience of diabetes, for shared mutual peer support and encouragement.
