Hey everyone, I am not too sure anything exists almost as empowering, natural, pure with the delicious holistic goodness than eating out your own organic vegetable garden!
I probably eat out of this garden 4 times a week or more.. Here I am about to steam cook kale, spinach, chinese cabbage and perennial basil!
I didn't have too much in my fridge other than eggs olives and my gorgeous vegetable garden full up with all sorts of weird and wonderful heirloom vegetables! So I had to get creative whilst keeping it simple.
I whipped up some eggs into an omelette as well as added some nice olives, I then got some spuds grilled then with cheese added right at the end just before taking them out the oven enough to cook and not burn.
You may be wondering that those 'green things' in the omelette is? I cut onion and garlic leaves as a spring onion substitute and it tastes really amazing in anything from sour cream, sauce to feta cheese and mayonnaise. Another great thing about growing onions and garlic in the garden is whilst they are growing you get to harvest and enjoy the leaves and a few months later in summer when they are ready to harvest you get to enjoy the actual garlic clove and onion bulbs!
Probably not the healthiest with tomato sauce and Mayonnaise but what a lovely garnish they made with this spread! Dinner is served and delicious it really was.
Trust you have an amazing week ahead!!
Cheer$;)
