Hey everyone, desperate times call for desperate measures, my South African mates will know what the title means but do you? This 'craze' is taking South Africa by storm. We all initially planned on a 3 week lock-down sadly this was extended so the most of us, stocked up our 'reserves' for 3 weeks and not 6.
As we neared the 3 week proverbial 'deadline' our private reserves got depleted. Some resourceful South African came up with a plan and fast. A 'Home Brew' South African style Pine-Apple Beer and it went viral.
The recipe is rather simple. You will need: 2 Pineapples, 2 packets of Yeast, 2KG's of Sugar and a packet of pineapple Jelly, yes you read that right, Pine-apple Jelly, don't ask me why just put it in, it works and is delicious!
Below a pic of the yeast which as risen nicely after around 15 minutes ready to be added to the brew.
Instructions as follows:
Fill a luke warm cup of water and add the yeast, let sit for around 15 minutes, whilst that matures, chop the pine-apple in chunks. I would first pour boiling water over the whole pineapple including the skin to eliminate any bacteria that may grow in the beer. Do not peel the pine-apple use the skin and all. Chop into blocks with the skin and put in a 5 litre container.
This is my second batch, instead of pine-apply jelly this time around I tried Strawberry jelly, this promises to taste like some wild cocktail I'm sure :)
With warm water in another cup add the Jelly and mix until dissolved. Add a litre of hot and a litre of cold water to the 5 litre bucket and a kg of sugar, stir until dissolved.
Once the yeast has 'risen/foamed' add it as well as the Jelly mixture to the 5 litre container and full to around 7/8ths of the way to the top. (always use plastic containers) these can explode and be rather dangerous if in glass. Tighten the lid until it is just under fully tight to allow for gas to escape.
Leave the mixture for around 3-4 days until the gas has stopped escaping, container swelling. Put in the fridge until ice cold.
Get a sieve and filter through this or a cheese cloth, pour in a glass add ice if you wish and enjoy.
Here I put in the side of my room and covered with a towel, apparently putting it in a warm dark place speeds up the brewing process.
Well this is all in theory anyways. I am currently on day 1 of the 'brewing process' I shall keep you all in the loop as to taste and kick. Resourceful we are?
