Besos inmensos...

The different flavors of cookies are part of the various recipes and ingredients. Although they can have exactly the same foods, changing the way of using them, usually causes a different flavor or consistency. That's why I love to invent with them, to give a different touch to my day, motivating me a lot, plus that energy and creativity serve me to rescue my little grasshopper with the Mission Cookie....
Yes, Mission Cookie, for my daughter and me, it's a moment of a lot of fun and snacking. I named it that, because we don't always have the most common ingredients or we are missing some, but for that reason I can't stop myself, except that I don't have to make them and I go out to buy them. However, I prefer to make them at home, because I regulate the sugar and I can make them more nutritious, and the best of all is that my little one loves to help me, so we both enjoy it very much.
Today we made them with rice cream, we had never used it, the texture was particular, although it may also be because we did not use eggs, but milk and a teaspoon of oil. But we had already tried that with wheat flour, this time we didn't have any. My daughter always with her radiant smile helped me to mix all the ingredients and the funniest part was when we were shaping the cookies, she was so excited that she screamed and jumped every time we put one on the tray. That's when I realized that Mission Cookie was giving the best results.
Now with the happiness that runs through me for remembering such a nice moment, I will give you my recipe for today, so that you never stop being creative when it comes to eating and playing.
INGREDIENTS
- One cup of cream of rice
- Optional half cup of wheat flour
- One teaspoon of oil or 50 grams of butter
- Half a cup of milk or 1 egg
- Half a cup of sugar
- The rest may be optional
- 1 teaspoon vanilla
- Lemon zest
- Oatmeal to taste
PREPARATION
First mix the sugar with the oil or butter, when it is more or less uniform, add the milk or egg. Add the optional ingredient, cocoa, vanilla or lemon zest.
When the mixture is homogeneous, add the rice cream or together with the flour, knead until it is consistent, and then keep it in the refrigerator, covering it or putting it in a plastic bag, leave it for 15 to 20 minutes.
Then, take it out of the refrigerator, and prepare a floured surface to knead the mixture and spread it until it is a little thick.
Make the shapes you want, place on the tray to put them in the oven (all are different so remember to consult before cooking), the cookies are done quickly between 10 to 15 minutes, depending on the heat and the size of the cookies. Then take them out and let them cool, to be ready to eat!
I hope you liked it, thanks for joining us in this little adventure of Mission Cookie. Huge kisses...
