This week in my quest for pizza perfection I tried something different.
I have been wondering how to achieve a pizza that is properly cooked right to the middle without using a pizza stone.
I want the crust to be crunchy, the inside of the dough to be fluffy but the bottom to also be crisp and evenly cooked.
So I thought this time I would try cooking my pizza dough like a flatbread.
I wont go over how I make my dough as I have showed that in previous posts, its a pretty simple process really.
This time when the dough had risen I put some in a frying pan and cooked it on both sides until it was starting to get a nice brown colour.
I started making my own pizza sauce recently using these products by Cucina. The chunky chopped tomatoes with herbs (basil and oregano) are divine and make a delicious sauce.
I just add some onions and garlic to the tomatoes and tomato puree and we have a pizza sauce your whole family is going to love.
First up cook the onions and garlic until they start to turn brown and the onions start to turn translucent.
Next we pour in some of the tomatoes. I wish you guys could smell these , as soon as the can is open the room smells like an Italian restaurant.
Next a generous amount of double strength tomato puree, this makes the sauce super rich and tangy.
Now we stir everything together on a medium heat.
Cooking the dough as a flatbread seems promising. The dough is already pretty firm on the outside and soft and fluffy inside. We don't want to over cook it as it still needs some time in the oven
Next up lets add our sauce...
A nice layer of Mozzarella cheese...
And whatever topping you want.I only had a pack of Chorizo so I went with this.
Next its time to pop it in the oven.
Looks good to me :).The base is nice and thick like a deep pan pizza. The crust is crunchy on the outside and chewy inside and the whole base is cooked evenly.
This seems like the same kind of result I would expect from cooking in an oven with a pizza stone. This pizza was better than many I have ordered in restaurants. I think the only way I'm going to be able to improve on this is by wood firing the dough.
