Above: Roast Pork Loin, Brown Basmati Rice, and a Salad!
Been a while, since I felt like cooking, so, I made a Roast Pork Loin.
First, criss cross cut into the pork loin, fat side down. then, I made a rub of Dark Brown Sugar, Cinnamon (because @dreemsteem loves it on food), and Clove. with teensy, tiny bit of garlic powder. I coat the pan with Olive Oil, and then, rub the sugar and spice mix onto the Roast.
Above: Cook your Pork Loin at 375ºF (190ºC) for about an hour.
After an hour, check the internal temp (or slice the roast and look for doneness) I like it a bit less cooked, so, 150ºF (65ºC) internal temp is perfect for me. The pork police say internal temp should be 160ºF. (71ºC).
Add some Brown Basmati Rice and a fresh salad for the side dishes. Leaf Romaine lettuce, Cherry tomato, cucumber, celery, carrot, and some shaved Parmesean Cheese. My family each have their own tastes in dressing, so at dinner, there is often a half dozen bottles to choose from.
And that makes me smile... better for the planet, better for my own family.
