Jakob Bladt is a Danish industrial designer with a masters degree in transportation design. His Instagram feed (https://www.instagram.com/jakobbladtdesign) is dedicated to his graduate level triathlon bike project, and does a great job of chronicling his design process with images of sketches, renderings, and quite a few prototype iterations. Definitely worth a follow if you are interested in bikes and design.
