I remember the posts about the school adjusting to that. As with so many things I'm not sure if all the ones who claim to be gluten intolerant helps those who really are, or hurts them. I have clients that say that, but then eat white sourdough bread because sourdough eats the gluten - which it does, but only up to 50% top as far as I know, usually more around 10-20%). I hear it so often that my first reaction is always non-believing, which would be the bad part. The over-cleanliness is certainly a reason for allergies, I think that correlation is already well investigated.
The sourdough was in a good mood today! Recently it is. Dry and warm weather is to its liking.
If everything is the same, it's more scary than re-assuring to me. Little variations are necessary to make it real.
