Good afternoon friends. What a gwan? On this beautiful Sunday I decided to make some curry chicken for dinner. I'm proud to say that I've got to the stage were I don't have to follow a recipe, and directions. I've cooked it enough that's it embedded to my memory.

So on the menu is curry chicken, cabbage with mixed vegetables, and fried plantains.

After washing and seasoning the chicken. I cut up some onions, garlic, thyme, and scallions. I added some olive oil to the pot. After heating oil I added the curry powder to burn it in thetons. I used the Chief brand of curry powder I find it to be better than blue mountain and grace. It's not to spicy or bland, it has great flavor. I also seasoned the chicken with some of the powder. I then added the cut herb to the pot.

I then added the chicken and turned up the flames, ro braise the chicken. Pretty much cooking the curry flavor into the chicken. I added a little bit of water, and covered the pot and let cook for 10 minutes.

At this stage much water is not needed, because as the chicken cooks it produces it's own water. Later on in the cooking process you can add more water depending on how much gravy you want.

After the 10 minutes I cut up some potatoes and added them to the pot. I would of added some carrots, but the mixed vegetables has carrots.

While I was doing this, my wife was cutting up and washing the cabbage. We then added the cabbage to the pot, added some olive oil, black pepper. We let the cabbage cook for a bit then added the frozen mixed vegetables.

As everything was cooking I cut up 2 yellow plantains. I fried the plantains in some olive oil. I placed the fried plantains on some paper towels to drain the excess oil off. I love me some plantains.

This is my Sunday dinner, everything was delicious. Oh my wife also made some cornbread muffins. We just used cornbread mix and added it to muffin tins.
