How are you all? I hope you're all doing well. Today is a blessed Friday, and my day has been quite busy. Fridays are usually hectic for me because my husband is at home. For the rest of the week, he works, but on Fridays he takes a day off, so I have to take care of him too. I end up doing small tasks for him, and then my kids also keep bothering me, so a lot of my time gets wasted. But I always manage to carve out some time for myself to do something. Today, I made chicken rice, and I will share the entire recipe with you, from start to finish. I'll show you how I made it. By the way, how do you like the pilaf I made today?
So, I’ll start with my process. Here, I’ve taken a bowl of rice, around one kilogram, and cleaned it properly. After cleaning, I washed it two to three times, and then I soaked it in water for about an hour.
Next, I did this: I chopped the onions, added oil, and put it on the stove to cook on medium heat. Then, I peeled the garlic and chopped the ginger. I made sure to peel off the outer skin of the ginger and cut it into small pieces. After that, I ground them together using a mortar and pestle until they were well crushed. You can see it here.
The onions had turned light brown, so I added the ginger and garlic paste that I had made and cooked it for a while.
Then, I added one kilogram of chicken meat and started cooking it.
Then, I added biryani masala, followed by a Knorr chicken cube (the one for rice). After that, I added one spoon of red chili powder and three spoons of salt. Apologies, I forgot to take a picture when I added the salt. I just wanted to let you know, and I’m sorry for that. But I did add three tablespoons of salt, the regular spoons we use for cooking.
Then, I added garam masala, which included cinnamon, black pepper, cumin, and other small spices. I added all of them and cooked the mixture, stirring it until the meat was fully cooked.
Once the chicken was cooked well, I took one bowl of rice and added two bowls of water because, for every part of rice, we add double the amount of water. I added two bowls of water, and once it started boiling, I added the rice. I had already partially cooked and drained more than half of the rice. Then, I covered the rice and cooked it on low heat, with a very low flame, for about 15 minutes to let it steam.
After 15 minutes, my rice were fully cooked and ready. I then took them out in a tray and served them to my kids and my husband, and I also enjoyed them myself.
