It's another beautiful creative Sunday and my energy levels is at 100% the reason is because by Thursday this week, the three weeks holiday will begin and I'm so excited about this break.
Today, I'll be sharing with you my vegetable sauce and rice.
This vegetable sauce is a special one because I prepared it with pork.
I know some people don't eat pork just like some don't eat beef or chicken meat. I eat anything edible and delicious.
So, I wanted to prepare my vegetable sauce but I wanted something special in it. Then I thought of pork. It's been a long time I eat pork so, I decided to use pork and cow skin (Pomo) for the vegetable. That made all the difference.
The ingredients needed for this delicious sauce are;
Rice
Vegetable
Palm oil
Pork
Cow skin
Pepper
Onions
Salt
Seasoning
The first thing I did was to boil my pork with the cow skin. So I washed it thoroughly, cut in tiny bits because I just want to take it with my spoon straight to my mouth. I boiled it with onion, salt, and a little seasoning.
While this is boiling, I cut my vegetables to my desired size and wash with cold water thoroughly. After washing with could water, I pour some warm weather on it and drain immediately. This is just to get rid of any unwanted particles in the vegetable.
The meat is ready now. So, I remove from heat and place a pot on fire. When the pot is dried, I added my palm oil. After about fifteen seconds, I added my chopped onions and fry for one minute before I added my pepper and onion mix. I allowed it to boil for some minutes
I added my pork and cow skin and the stock to the pepper mix boiling on medium heat.
I allowed it to boil and cook well and then I added a little salt and seasoning because I have added to the meat while boiling it. I cover the pot and allow to cook for a little more time before adding my vegetables.
I mix it well and immediately drop it from the stove because I don't want to over cook the vegetable. The vegetable sauce is ready.
I went ahead and boiled some rice to go with it and I served it.
It is really delicious and not expensive to prepare.
The pork tasted great, it was irresistible.
