It's been almost 1 year since I've been keeping Scoby, why am I only now finding out about this drink that's rich in benefits. Being a 'mother' of the scoby that I cared for and developed into a fermented drink, it's hard to express, how happy I am to have them so many and live healthily. Starting from 1 scoby jar measuring 500 ml, now it has reached 4 liters in volume, and it's not an easy journey. It failed and my scoby was infested with mold, which was painful.
Since then, I started actively reading several articles and journals, knowing some tips and tricks to keep Scoby healthy and growing, making caring for Scoby and producing kombucha a fun activity, no longer a burden. Every day I take the time to tell stories and say positively with all my scobys in glass jars, there is positive energy not only for all of my scobies, even for myself.
Not many people want to care for scoby, because maybe kombucha is still easy to buy, but it feels like if we can care for and produce kombucha ourselves, there is an inner satisfaction that is truly extraordinary, which cannot be expressed in words. Currently, scoby and kombucha are my life companions, even though they are just for me to enjoy alone, not to be sold to anyone, but the taste is really very different. Every day see the changes, like you have a pet dog.
But, there is a way that can really make your scoby well maintained and also give a very good taste too. Namely cleaning it from the remnants of the tea dirt that has settled, or also the remaining bacteria and the cloudy color that can make the scoby jar look unfit for drinking. This will also make Scoby easy to develop, even giving a very good performance.
So, I haven't had a scoby in a very long time, I've had 5 harvests and I haven't had time to clean them properly. Supposedly, in the third harvest I have to clean it from the rest of the tea that has settled. Yes, because it's a human name, there is a more dominant feeling of laziness, I postponed it until now, because I felt that my scoby was not performing well.
Actually taking care of scoby is very easy, stays in a sterile and clean condition, doesn't use soap and also maintains the right temperature. This method is relatively easy and worth it for me, in terms of using a short amount of time and not having to bother with various things.
Maintain A Scoby of Kombucha
The first steps, prepare the container, spoon and tea strainer. All three must be sterile, after washing with water and soap, remember, use running water until the tools used are free of soapy water, then I soak them in hot water or I flush them with hot water. We never know that bad bacteria will settle and the process of treating Scoby can fail.
The second steps, prepare a container that has been sterilized with warm water, it only takes 30-40 degrees Celsius, and keep this temperature so that the scoby remains comfortable when cleaning. Use clean hands (no dirt left and wash with soap and running water) then rinse the scoby and wipe it gently so that the outside of the scoby can be clean and the rest of the tea falls out, then place it in another clean container.
The third steps, pouring all the kombucha or starter kit from kombucha into another jar, this aims to filter the tea that has settled on the surface of the jar. You can also wash the jar and reuse it. The jar can be washed in soapy water and rinsed under running water, after which you can pour warm water on the jar and wipe it with a clean dry tissue.
I run all these tips every time I want to treat a scoby, in the end their performance is very good, even baby scoby can grow very thick even though it's only been 3 days after I cleaned it. This really makes me very happy!
