I hope all is well, relaxed, and having a great bonding time with families and friends. As for me and my family, we're all good but actually not totally good because my daughter tegoshei@tegoshei is not feeling well due to her sore throat.

Hopefully, she'll get better soonest in God's loving care and healing power. Well for my blog this weekend, I want to share again the dishes I cooked. It was quick and easy macaroni sardines and fried chicken.

I was again a bit curious about the macaroni sardines recipe I saw in some reels on the internet. So, I tried cooking it too. Here’s how I did it.

Quick and Easy Macaroni Sardines and Fried Chicken



INGREDIENTS:



-Macaroni
-Sardines
-Ketchup
-Tomato Sauce
-Maggi Magic Sarap Seasoning
-Salt
-Onion
-Garlic
-Malabar Spinach
-Canola Oil
-Water




-Chicken
-Soy Sauce
-Kalamansi
-Garlic Powder
-Paprika
-Flour
-Corn Starch
-Crispy Fry
-Ice Cubes
-Tabasco Sauce

PREPARATION:





For Macaroni and Sardines:


Prepare two cans of sardines.
Strain the sauce but set them both aside.
Peel and wash onions and then cut into small pieces
Crush and peel garlic then cut into small pieces.
Properly wash and clean the malabar spinach and then cut the bigger leaves.
Then prepare and set aside all of them including the other ingredients for seasoning.




For the Fried Chicken:


Wash and clean the chicken thoroughly and strain.
After straining, marinate the chicken with soy sauce, garlic powder, paprika, Maggi Magic Sarap seasoning, and ground black pepper.
Coat and mix all the seasonings with the chicken well and then cover them with cling wrap, and refrigerate for at least one hour.




For the batter:


Crack one egg, add 2 tbsp of all-purpose flour, 1 spoon of cornstarch, 2 tbsp of crispy fry, garlic powder, a little paprika, a pinch of salt, ice cubes instead of water, and a few drops of Tabasco sauce.
Mix them all together until the ice cubes are melted and the batter's texture becomes smooth. Then set them all aside.

COOKING TIME:

Boil some water in a pot or cooker, and put some canola oil and salt.
When it boils, add the macaroni and cook until al dente.
Remove from the pot, transfer to a strainer, and then set aside.




Heat a small amount of canola oil in a pan then sauté garlic and onions until aromatic. Add the sardines and sauté them while pounding them little by little. Add the ketchup and tomato sauce. Let it simmer for a few minutes and then add water and season it with ground black pepper and just a little bit of Magic Sarap seasoning.





Continue to simmer for another few minutes, and then add the malabar spinach until it wilted.




Add the cooked macaroni pasta. Mix them well.




And that's it...we already have this macaroni sardines recipe. It tastes good anyway. (I usually cook some extra servings, so that we can also share to our neighbor.)






As for the fried chicken, this is just a simple way of frying because I lack some ingredients like butter and bread crumbs. Just dip and coat the marinated chicken with the batter and then fry them on low to medium heat until all of them are finished or cooked already.
