As you all know, it's pickle-making season,
"Chili pickle" or "merch ka achar" is a popular condiment in many cuisines! It's made by preserving chilies in a mixture of spices, oil, and vinegar. Would you like a recipe or tips on making merch ka achar?
and my mom makes all kinds of pickles. Today, we were making chili pickle
so I thought I'd share with you all. Mom had brought home some green chilies from the market,
which we washed and dried thoroughly with a clean cloth, making sure not a single drop of water remained."
Then, in a pan, mom heated mustard oil to remove any impurities, letting them settle at the bottom. She strained the clean oil and set it aside.
Next, she slit the chilies and stuffed them with salt
before frying them in the hot oil,
making sure the flame was low to prevent burning or over-browning."
Frying the chilies in oil gives the pickle a rich flavor! Does your mom add any spices or seasonings to the pickle after frying the chilies?
Now, let's put it in a jar, and our delicious chili pickle is ready!
