I serve Japanese-Asian vegan food at a local market about twice a month.

When I started having my stand at the market in 2020, I was selling plants. One of them was red Shiso, a popular Japanese summer herb with a beautiful purple color. I came up with an idea to produce Japanese Shiso syrup out of the plants. It was received well. After that I got funding to make it as a real product from the state of Sachsen, where I live. I rented a kitchen for the project but I only needed it in Summer. Then I used the kitchen to cook Japanese food to serve at the market.

I enjoyed cooking, serving and talking to people. However, after three years, I notice that I pursue too much efficiency these days. Even if I make the process efficient, the stand fee (around 20% of the sales including tax) and labor cost are quite heavy and my food business won't become a super profitable business. I noticed it from calculating my income and expenses every month and it became obvious when I did the 2021 tax declaration at the end of last year.

Then why don't I do what I can simply enjoy like I did three years ago? I have been thinking about what I really wanted to do. I would be happy if I could meet people, talk with them, cook and serve food relaxedly. If my German is improved and I have some pocket money, I would be super happy.

So this time, I decided to make Sushi without any restrictions. I took time and effort to prepare ingredients and the price rose. I could make easy going and less costly Sushi but it's not what I want to do. I wondered how people would receive the change.

In the end, my sales were as always. Since there were more people at the market, I could sell more by not raising the price. But I'm satisfied with the result. I was happy to receive compliments from my customers and could take time to talk with them and neighbors :)

I thought I was living pretty much as I wanted to, but I realized that I must ask myself from time to time "Is that really what I want to do? Is it fun?"

However, I also have a background in engineering and computer science, so I cannot ignore efficiency. Now I am planning to make a product whose production can be highly automated while I can be proud of selling it.

My adventure in the food field continues 😁

Money will follow. First, I must be happy and then I make it profitable while I continue being happy.

月に2回ほど地元のマーケットで日本・アジアのビーガン料理を作って出しています。冬はご飯が硬くなってしまうのがいやで、肉まんだけ出していたのですが、ようやく暖かくなってきて、またお寿司を巻き始めました。夏のベトナムのバーンミーも定番でこちらも出すのが楽しみです。

2020年にマーケットに出始めた頃は植物を売っていて、そこから紫蘇シロップを作ることになり、2021年にはザクセン州の助成を受けて製造できることになり、設備の整ったキッチンを借りたものの夏にシロップを作る以外に使わないのはもったいないので、マーケットで日本食を出し始めました。夏だけ借りるという選択肢もあったとは思うのですが、食べるのも作るのも好きなので毎月借りることにしました。普段は引きこもりのデスクワークが多く、体を動かして、人と話して、生きたドイツ語を話すよい機会になっています。

ただ、そろそろ3年目に入るところで慣れもあってか、なんとなく「たくさん効率よく作って、売り上げを上げる」方向に走っていることに気づきました。効率は超重要ですが。そもそもたくさん売ったところで、売り上げに対してパーセンテージでかかる出店費用(税込で20%弱)と人件費が重く、フードビジネスはよっぽどうまくやらないとバラ色のビジネスにはなりません。これは去年2021年分の確定申告のために所得をまとめて痛感したことです。毎週家計簿をつけているのでうすうすは気づいていましたが w

本当に私がしたかったのはなんだったのか、ここ数日考えていました。「人と会って、話して、見ても食べても楽しいものをゆったり作って、ドイツ語力とお金がついてきたらうれしいな。」でした。

ということで、今回はゆったりお寿司を巻くことにしました。巻きたいなと思う具に制限を設けず、きんぴらやら何やら手間のかかる具も用意しました。スーパーで売られているお寿司のように、きゅうりやにんじん、パプリカなど巻きやすくて、準備に手間がかからなくて、費用を抑えてみんなに届くのもいいとは思うのですが(といっても8ユーロ、1000円以上します)、それは多分作りたいものじゃない。

売り上げは減ってもどのみち大儲けビジネスではないし、ちょっとだけ値上げして、あれこれ用意した具をいつも以上にきれいに巻きました。足を止めてくれた人、買っていってくれた人には「おおー」「日本の繊細なものっていいね」と喜んでもらえました。向かいの農家のお姉さんの「ベスト寿司!」のほめ言葉もまたもやいただき、これ、うれしいんです。

ふたをあけてみると、売り上げはいつも通りでした。私の手間はちょっとかかったかもしれませんが。

かなりやりたい放題生きていると思っていましたが、折々「それって本当に自分がしたいこと?楽しい?」と問いかけながら生きていくのって大事だなと思いました。まずは楽しさやよろこびや幸せ。その次にそれらをキープしたままお金にすることを考える。改めて学びました。

とはいえ工学・コンピュータサイエンス出身でもあるので、フルオートでできるけど満足いく製品を作ることも計画していて、これはこれで楽しいんですよね。実際肉まんの製造はコンベクションオーブンを使うことで、苦痛だけ取り除いて(上記でやけどしそうになりながら一つずつ蒸し器から取り出す・・・)、一気に最大100個まで蒸せるようになって、小躍りするなんてこともあったので。

楽しさ優先、効率も追求して、まだまだ食分野の探究は続きます。
